Ingredients

  • 30ml/2 tbsp vegetable oil
  • 1 large onion - finely chopped
  • 2 garlic cloves - crushed
  • 5ml/1 tsp mild chilli powder
  • 2 red peppers - seeded and finely chopped
  • 225g/8oz carrots - finely chopped
  • 225g/8oz potatoes - finely chopped
  • 3 sticks celery - remove any 'stringy' strands and cut into slices
  • 900ml/1½ pints/3¾ cups vegetable stock
  • 90ml/6 tbsp crunchy peanut butter
  • 115g/4oz/⅔ cup sweet-corn kernels (tinned or frozen are fine)
  • Salt and freshly ground black pepper 
  • Some roughly chopped unsalted peanuts to garnish (optional)

Instructions

  1. Heat the oil in a large heavy-based pan
  2. Add the onion and garlic and cook, stirring, for about 3 mins or until the onion is transparent but not brown
  3. Stir in the chilli powder and cook for 1 more minute
  4. Add the peppers, carrots, potatoes and celery. Stir well until all the ingredients are thoroughly combined
  5. Season to taste
  6. Bring to the boil then lower the heat and simmer for about 20 mins, or until the vegetables are tender
  7. Adjust the seasoning if necessary before ladling the soup into warm bowls
  8. Sprinkle with the chopped peanuts and serve

Notes

This soup freezes well so it's a great one to batch cook.
