Celery soup is filling, delicious, vegetarian/vegan and will work for those on keto
This celery soup recipe is so easy to make you’ll wonder why you haven’t added it to your repertoire before now.
And it’s full of healthy ingredients so there’s no excuse for not giving this recipe a try!
What are the health benefits of the ingredients?
Olive oil
Several large studies demonstrate that people who consume olive oil have a much lower risk of stroke, the second biggest killer in developed countries.
Garlic
Garlic improves your immune system and is credited with reducing the length of the common cold and reducing the number of times we get sick.
Red onion
Red Onions contain more flavonoids than white onions helping to lower the risk of all manner of age-related diseases. Red Onions are a natural blood thinner which helps guard against heart disease and high blood pressure.
Celery
Celery contains tryptophan used by our bodies to produce serotonin that helps us regulate our sleep cycle. Celery also contains high levels of the mineral potassium needed to ease the stress response.
Ingredients & preparation
- 1 tbsp olive oil
- 1 garlic clove – chopped
- ½ red onion – chopped
- 150g/5½oz celery – celery has some hard-to-soften, stringy threads running down the length. Remove those as far as possible and chop the celery into slices
- 200ml/7fl oz hot vegetable stock
- 2 slices toasted ciabatta to serve – optional
Method
Heat the oil in a saucepan and cook the garlic, onion and celery over low heat for five minutes, until softened
Add the vegetable stock and simmer for 10-12 minutes
Transfer the soup to a blender and liquidise
To serve, place the soup into a bowl with the toasted ciabatta alongside
Your celery soup will be creamy
Your finished celery soup will be nice and creamy but if you aren’t making the vegan version you can add a swirl of cream.
